A girlfriend told me that her favourite meal of ALL TIME was a banana blossom curry she had while travelling in India. I saw the tin in the health food section at my local supermarket and decided to give it a try. It’s in brine so you take it out, rinse and then chop and add it to the curry. It has a similar texture to jarred artichoke hearts. It’s not slimy and has a bit of chewiness which is good!

I searched through many recipes and found an Indian recipe by the BBC. I accidentally used coconut cream instead of milk and this made the curry very decadent and sweet. I roasted raw cashews and flaked almonds and added these at the end. I think a squeeze of lime would be nice too.

Banana blossoms contain heaps of fibre, iron, potassium and magnesium. They are a natural antioxidant and are good for women’s menstrual problems.
